How old is old for pinto beans. I have some 1998/1999. Are they even worth trying?
Do I soak them overnight?
Hot water?
Cold Water?

If they look and smell OK, then they should be fine. Just cook them as you would any dried bean. I soak them overnight in cold water. Drain off water. Cook on simmer with fat back or a ham bone until tender.
