Thanksgiving Leftovers

One great (or awful) thing about Thanksgiving is the leftovers. The key is to weave those foods in. Don't just go for reruns.


We had a grand Thanksgiving dinner yesterday. Oh man. I can feel my jeans groaning. That's OK. It's only one day a year. Now, of course my Southern Holiday Cranberry Salad was all eaten, but still, there are the rest of the leftovers.

For supper last night, I made Taco Chip Casserole. That was a big change of taste from the mid day meal. I knew everyone was full of traditional fare, so I switched it up. The family members who stayed over here loved that casserole which only takes a short while to whip up. I ended up writing down the recipe and sending that along as my guests pulled out and headed home.

Today, I made some Southern Pan Fried Potatoes and served with turkey. Tomorrow, I'll quick heat some ham in the frying pan with biscuits. The next day I can make some potato pancakes with the mashed potatoes and use some small chunks of the ham in those.

Ham and turkey sandwiches are nice over the weekend especially with different breads like onion rolls and heated with different cheeses.

Some of the dishes will freeze. The cornbread dressing does fine in the freezor and will be a treat in a week or so. The meats also do fine to freeze and then used in other dishes.

It really is nice to have some delicous foods cooked and ready to use. If you toss out the foods from the turkey day and don't mix in some new items, then it feels like limp Friday, Saturday, and Sunday. Be a little creative, and you've got a number of great meals that feel brand new.
