One of our favorite treats at Halloween is roasted pumpkin seeds. They are easy to make and are quite nutritious. My son asked about making these back when he was a kid. I got a farm wife to tell me how to whip these up. See my recipe for directions on how to roast your seeds.
The bright orange jack-o-lantern pumpkins are not the type generally used for recipes, but they can be cooked down and used to make puree.
