Make a Tasty Southern Dessert with Fresh Peaches in Stir Batter

Stir up a quick and easy peach cobbler for dessert tonight.

Peach season is a time of celebration in the South especially when it’s a good harvest. Some years are not so great, because a late freeze can wreak havoc on the budding peaches. Fortunately, there are not a lot of really bad years. And, it seems like a bad year is followed by a bumper year.

One Southern favorite recipe with peaches is peach cobber. There are a number of versions, and most are pretty simple to make. Unlike peach pies which require more skill with the crust to consider, peach cobbler is a stir and bake recipe.

This recipe calls for simply mixing together the fruit and the topping items. It may sound odd. But, the batter rises to the top, so the end product is what home cooks would consider and recognize as a fruit cobbler.

Super Easy Fresh Peach Cobber Recipe

Ingredients:

  • 1 stick butter (1/2 cup)
  • 1 cup plain flour
  • 3 tsp baking powder
  • 1/8 tsp salt
  • 1 cup sugar
  • 1 cup milk
  • 1 tsp vanilla (or vanilla flavoring)
  • 3 cups fresh peaches (sprinkle with sugar if they are not soft and ripe)

Directions:

  1. Get out a 9 x 13 inch (or similar) pan or casserole dish and put stick of butter in dish.
  2. Turn oven to 350 degrees F and put pan with butter in oven until butter has melted. Watch close and do not let butter burn.
  3. Shake the pan a bit so that the butter is even over the bottom of the pan.
  4. Mix together the flour, baking powder, salt, and sugar.
  5. Stir the vanilla and milk into the flour mixture. Note that the batter will be lumpy. Don’t over stir or the topping will taste tough.
  6. Fold in the fresh peaches gently.
  7. Pour the cobbler mixture into the pan with butter.
  8. Bake for around an hour or until golden brown on top at 350 degrees F.
  9. Top with vanilla ice cream for an extra special treat.

This is really an easy and tasty recipe. It's a good one to do when baking with kids because it's hard to mess it up!
