Broccoli salad is a popular dish in the South and comes in many varieties. Summer Broccoli Salad features fresh tomatoes and garden grown onions.
Most Southern cooks have a favorite broccoli salad in the recipe file – or several of them. Broccoli salads are tasty, easy to make, and can be made ahead. They are great for pot luck dinners, barbecues, company meals, and holidays.
More often during the colder months, broccoli salads feature year-round ingredients like raisins, bacon and cheese. During the summer, it’s common to use garden produce for a change of pace and to capitalize on fresh garden vegetables.
Summer Vegetable Broccoli Salad Recipe
1 head or bundle of broccoli (cauliflower can also be used – but the color isn’t as nice as the green with the broccoli)
1/3 cup oil (vegetable oil is fine – but olive oil is lighter and healthier)
2 TBS lemon juice
½ tsp salt
1/8 tsp pepper
1 onion diced (or in rings – but harder to eat)
4 medium vine ripe tomatoes diced
1 tsp mustard
1/3 cup sour cream
Directions:
Wash the broccoli and shake off excess water. Cut into bite sized pieces and put into large bowl with a lid. Tupperware works well. Don’t use the tough feeling stem pieces.
Mix together in a small bowl the oil, lemon juice, salt and pepper. Pour over broccoli and toss well.
Add onions and tomatoes and gently toss to work the vegetables in evenly.
Mix mustard in with sour cream. Stir well. Pour over vegetables and toss again gently.
Chill for an hour or so. You can chill longer, but the tomatoes don’t hold up as well to refrigeration. They do, however, taste very good in this broccoli salad.
