Note: Various types of summer squash can be used in recipes calling for zucchini. Simply use yellow squash or other summer varieties as indicated. Flavor varies slightly, but the texture is similar, so squash recipes are versatile. Don’t, however, use winter squash in such recipes. Winter squash have thicker skins and take longer to cook. They are more akin to pumpkin in terms of cooking.
