Fried Summer Squash Balls with Spices

Summer squash grow and produce well, so it's good to have plenty of recipes on hand featuring zucchini, yellow squash and patty pans.

Most Southerners who have gardens put in a few squash plants. Those who don’t can find squash in season at Farmer’s Markets and at roadside stands.

There are many ways to serve squash including raw in salads, but it’s common to fry squash in the South. Zucchini (or other summer squash) can be sliced, dipped in egg and then flour with seasonings and fried in slices, or the squash can be grated and fried as fritters.

Southern Zucchini Squash Fritter Recipe

Ingredients

  • 3 zucchini squash (6 to 7 inches in length)
  • 3 eggs
  • 4 TBS plain flour
  • ½ tsp salt (or seasoning salt)
  • ½ tsp cinnamon (ground rather than cinnamon sticks)
  • ¼ tsp ginger

Directions

  1. Grate zucchini into colander and press out excess water. Also, take a paper towel and pat lightly to absorb water on top.
  2. Lightly beat eggs.
  3. Add eggs, flour, salt, cinnamon, and ginger to zucchini and toss until zucchini mixture is even.
  4. Heat oil in frying pan. Level should be about a half inch. The squash fritters are turned once, which saves oil over deep frying.
  5. Bring oil to a high but not smoking temperature. You can carefully drip a little water on top to check the heat. The water will bounce when the oil is ready. But, do be careful.
  6. Take a serving sized spoon and gently drop balls of squash mixture into oil.
  7. Fry until lightly browned and then turn and lightly brown the other side.
  8. Lift fritters out of oil one by one and put on plate covered with paper towels to absorb excess oil.

Note: Various types of summer squash can be used in recipes calling for zucchini. Simply use yellow squash or other summer varieties as indicated. Flavor varies slightly, but the texture is similar, so squash recipes are versatile. Don’t, however, use winter squash in such recipes. Winter squash have thicker skins and take longer to cook. They are more akin to pumpkin in terms of cooking.
