It's definitely summer in the South when the tomatoes turn bright red or yellow or even orange or purple tinted.

Home gardeners love to grow tomatoes in the sunny South, and most years yield a bounty beyond expectations. It’s common to can or freeze tomatoes for the colder months as well as to eat loads of tomatoes during season. And, most folks share the extras with neighbors who don’t manage to get a garden cleared and planted.

Many families simply serve up big slices of tomatoes with dinner or have tomato sandwiches with white bread and mayonnaise. But, it’s fun to have some fancier tomato dishes like Southern Tomato Pie which is a simple recipe and very tasty.

Southern Tomato Pie Recipe

Ingredients:

  • 1 pie crust (9 inch deep dish)
  • 2 to 3 large slicing tomatoes (or more smaller ones)
  • 1 cup mayonnaise (or Miracle Whip for a sweeter taste)
  • 1 tsp basil
  • 1 cup cheddar cheese
  • 1 egg
  • 1 tsp salt
  • ½ tsp pepper

Directions:

  1. Make or buy a deep dish pie crust and bake it until just lightly browned at 350 degrees F.
  2. Put the baked pie crust aside to cool while mixing up the pie filling. It should take around 15 to 20 minutes for the pie shell to cool down.
  3. When pie crust is cool, mix together the mayonnaise, basil, cheese, egg, salt, and pepper.
  4. Slice tomatoes into cooled pie crust. Slices should be about the same thickness as for a tomato sandwich or slices of tomato to go on a hamburger.
  5. Sprinkle the mayonnaise mixture on top of the tomatoes in the pie shell.
  6. Bake the tomato pie at 350 degrees F for 30 to 40 minutes or until the mixture on top of the tomatoes is brown nicely.

This reminds me a little of a grilled cheese sandwich with tomatoes. Sounds really good.

This was AMAZING. It was easy quick and so delicous. I altered a few things: I added ground meat cooked, and drained, mushrooms, onlions and garlic to the top of the tomatos and then cheese/mayo mixture.
