Green Peppers Baked with Sausage, Rice and Cheese

Stuffed bell peppers make a delightful meal-in-a-vegetable option for dinner or for freezing ahead for later.

Sweet garden peppers or bell peppers are easy to grow and produce well, so many gardeners in the South grow various colors of peppers. Peppers all start out green actually and can be eaten at any stage, but it's better to let them mature to full size and to the true mature color. Fully grown peppers taste better and also have more nutrients than immature bell peppers.

Bell peppers are always great raw in salads or to eat with homemade vegetable dips, but they're also great cooked or grilled. Often, sweet peppers are used simply to add a tad of flavor or color to a dish. In the case of stuffed peppers, the pepper becomes center stage and packs a nice punch when balanced with rice and/or meats.

It does take some time and effort to make stuffed sweet peppers, but they can be made in larger batches and frozen for quick meals later. Simply assemble the peppers (sans the cheese on top), wrap, and put in the freezor. Then, thaw and bake as indicated.

Southern Stuffed Bell Pepper Recipe

Ingredients:

  • 6 bell peppers (any color or mixed)
  • 1 pound pork sausage (mild or spicy to taste)
  • ¼ cup onion (chopped)
  • 1 ½ cups rice (pre-cooked)
  • 1 jar (8 ounce) Cheez Whiz
  • ½ cup Rotel brand canned tomatoes (or petite diced tomatoes with seasonings added)

Directions:

  1. With a sharp knife, carefully remove top from pepper so that the bottom is a shell to hold stuffing mixture. Once top is removed gently remove seeds and large flaps of membrane inside the pepper.
  2. Boil peppers for 5 minutes until partially cooked. Then, remove from water and let excess water drain off.
  3. Brown sausage in skillet and drain off fat.
  4. Add the cooked rice, ¾ of the far of Cheez-Whiz (saving the other ¼ for the top), and Ro-tel tomatoes. Stir until mixture is even.
  5. Fill peppers with meat and rice mixture.
  6. Bake for 40 minutes covered at 350 degrees F.
  7. Spoon the remaining ¼ jar of cheese on top of the peppers (covering the top hole) and place in oven for 5 minutes uncovered until cheese is hot and bubbly.
  8. Serve hot.
