Stuffed bell peppers make a delightful meal-in-a-vegetable option for dinner or for freezing ahead for later.
Sweet garden peppers or bell peppers are easy to grow and produce well, so many gardeners in the South grow various colors of peppers. Peppers all start out green actually and can be eaten at any stage, but it's better to let them mature to full size and to the true mature color. Fully grown peppers taste better and also have more nutrients than immature bell peppers. Bell peppers are always great raw in salads or to eat with homemade vegetable dips, but they're also great cooked or grilled. Often, sweet peppers are used simply to add a tad of flavor or color to a dish. In the case of stuffed peppers, the pepper becomes center stage and packs a nice punch when balanced with rice and/or meats. It does take some time and effort to make stuffed sweet peppers, but they can be made in larger batches and frozen for quick meals later.
