Great Holiday Cookie Using Your Own Pumpkin Puree or Canned

Pumpkin cookies are pretty and taste great. Try this easy pumpkin recipe for a holiday or "any day" treat.

Whether you’ve whipped up your own pumpkin puree, have a little leftover pumpkin from making another dish (only need one cup of pumpkin for this recipe), or just have a hankering for some delicious cookies, Pumpkin Drop Cookies are a good choice.

Pumpkin is low in fat and high in fiber and potassium. It’s also a terrific source of beta-carotene. That bright orange color is a dead giveaway on the beta-carotene. Of course, you have to factor in the butter, sugar, and flour when you use pumpkin for cookies. Still, you get some of the benefits of pumpkin and a healthier cookie than many.

Southern Pumpkin Drop Cookies

  • ¾ cup butter softened (can also use margarine)
  • 2/3 cup brown sugar packed (light or dark is fine)
  • 2 eggs
  • 1 ½ tsps. vanilla or vanilla flavoring
  • 1 cup pumpkin (not pie filling – plain canned pumpkin or your own puree)
  • 2 cups plain flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1/8 tsp. salt
  • 2 ½ tsps. pumpkin pie seasoning (in the spice section with cinnamon etc.)
  • 1 cup raisins (dark or the yellow – either is fine)
  • 1 cup nut pieces (pecans, walnuts etc.)

Directions:

  1. Use a mixer to combine butter, brown sugar, eggs, and vanilla. Beat until light and fluffy.
  2. Add pumpkin and mix well.
  3. Add flour, baking powder, baking soda, salt, and pumpkin pie spice seasoning. These can be sifted but work fine just adding and mixing.
  4. With a large spoon mix in the raisins and nuts. You can also use crasins or chopped prunes or dates if you have those on hand.
  5. Drop by spoon fulls onto an ungreased cookie baking sheet and bake for about 10 to 12 minutes at 375 degrees F. The edges should be golden brown when the cookies are ready to come out of the oven.

Pumpkin cookies are good for a family treat or to take to a party or cookie exchange.
