Southern Peanut Butter Cookie Recipe

Ingredients:

Directions:

  1. Let the butter or margarine sit out a bit to soften up.
  2. Combine shortening, softened butter, peanut butter, sugar, brown sugar, and egg. Blend well.
  3. Blend together flour with with baking soda, baking powder and salt and add to peanut butter mixture. Again, blend well.
  4. Cover and chill for an hour or so. Can be longer.
  5. Roll dough into one inch balls - a little smaller than golf balls.
  6. Place dough balls on greased cookie sheets. Leave space between the balls - a couple of inches.
  7. Use a fork to mash the balls out flat like cookies. Make a crisscross pattern. Mash one direction. Turn the fork and mash the other direction. If the fork is sticking to the dough, dip the fork lightly in flour and continue.
  8. Bake at 375 degrees F for 10 to 12 minutes. Peanut butter cookies should be very lightly browned and set. Don't overcook them, or the peanut butter cookies will be hard instead of soft and chewy.

Here are some other favorite Southern cookie recipes to try out. They're all yummy, and cookies are fun to make and eat.

Sugar Cookie Recipe - This one was written for Christmas, but it's a basic sugar cookie recipe - good for any time of the year. These sugar cookies are big, puffy and soft. They are great with frosting (recipe included). If you need to take sugar cookies to a school party, this recipe is perfect.

Snickerdoodles - You see these around Christmas, but they are good any time of the year. Snickerdoodles are similar to sugar cookies but have a cinnamon and sugar topping that gives them a crispy flavor on top.

Chocolate Oatmeal No Bake Cookies - Did anyone grow up without making Chocolate Oatmeal No Bake Cookies? Super quick and easy, these are always a hit.

Southern Homemade Brownies - OK. These are not really cookies, but it's darn hard to beat a Brownie. This is a great recipe. Easy to make. Very tasty.
