Tasty Southern Main Dish - Great for Leftover Holiday Ham

Looking for a great recipe for ham left over from the big holiday meal? Or, just want to try out a new and tasty casserole that’s always a crowd pleaser?

A ham and potato casserole is a comfort dish that tastes fabulous on a cool fall or winter evening. The homemade sauce and cheese topping make it one of those main dishes that is always a family favorite.

Southern Ham and Potato Casserole Recipe

Ingredients:

  • 2 to 3 cups cooked ham (cut into small bite sized pieces)
  • 4 to 5 medium potatoes (sliced thin in circles as for pan frying)
  • 3 TBS butter (or can use margarine or oil)
  • 1 cup onion (chopped fine)
  • 3 TBS plain all purpose flour (not self rising)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 ½ cups whole milk
  • ½ cup instant non-fat dry powered milk (do not mix up with water)
  • 1 cup shredded cheddar cheese (or other favorite cooking cheese)

Directions:

  1. Melt the butter in a large skillet.
  2. Add onions and sauté until tender.
  3. Stir in flour, salt, and pepper and mix well. A fork works well for this part.
  4. Slowly pour in milk and powdered milk while stirring over low temperature.
  5. Once the sauce is mixed together well and not clumpy, turn the heat up to medium and cook while stirring until sauce boils lightly and thickens. This takes around 5 minutes, but times can vary depending on the temperature.
  6. Remove from heat and then prepare casserole.
  7. Grease, butter or spray with Pam a 2 quart casserole dish.
  8. Spread half the potatoes in the bottom of the casserole dish.
  9. Add half the ham on top of the potatoes.
  10. Pour half the sauce over potatoes and ham.
  11. Repeat the layers in the same order with the other half of the ingredients.
  12. Sprinkle top with cheese.
  13. Bake in preheated oven at 375 degrees F.
  14. Bake covered for 45 minutes and then for 15 to 20 minutes until potatoes are soft when tested with a fork and cheese is nice and melty.
