Enjoy a sinfully delicious cheese fish dish that is a Southern favorite, since it's easy to make and is always a crowd pleaser.

Fish is popular in the South, and Southerners whip up a variety of fish dishes. Fried fish probably tops the list in the South, but various grilled, broiled and baked fish recipes are also common.

One interesting fish recipe in the South is Cheese Fish. While the combination and fish and cheese may sound rather odd, the result is a rich and very tasty main dish. Baked Cheese Fish is not the prettiest main dish that might go on the table, but the fish can be placed on a lettuce bed with the extra butter and cheese poured over to pretty up the presentation. Even served out of the casserole dish with splatters and all, Cheese Fish tastes so great that no one really cares if it's not going to get plated up on Hell's Kitchen to impress Gordon Ramsay.

Southern Baked Cheese Fish Recipe

Ingredients:

  • 1/2 cup butter or margarine
  • 2 TBS chopped parsley (or parsley flakes)
  • 1 TBS lemon or lime juice
  • 2 tsp salt
  • 1 tsp pepper (fresh ground is especially nice in this recipe)
  • 2 lb. fish fillets (flounder, haddock, cod, tilapia or family favorite)
  • 1 onion sliced up in thin slices and scattered over the fish in rings
  • 6 slices cheese (American is fine but other cheeses can be used)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Melt the butter in casserole dish (9 x 13 or close). This does not take long. Watch and don’t let the butter scorch.
  3. Stir the parsley and lemon or lime juice in with the butter.
  4. Sprinkle the salt and pepper on the fish fillets and then put the fillets in the butter mixture. Flip them over so that they are coated on both sides with the butter/margarine.
  5. Arrange the onion slices evenly over the fish. Then, put the cheese slices evenly over top of the fish and onions. You may want to break the cheese slices in half depending on how they are fitting on top of the fish.
  6. If you have a lid for the casserole dish, then put the lid on the dish. If you don’t have a lid, then use tin foil (also called aluminum foil) and crimp that down tight around the edges.
  7. Bake the fish for 35 to 40 minutes or until the fish is cooked and flakes easily.

Other Favorite Southern Main Dish Recipes:

Crock Pot Turkey Breast - When a whole turkey is too much, a turkey breast in the crock pot is perfect. Just put it on in the morning, and dinner is ready after work. The super moist turkey is great served later sliced for sandwiches too.

Electric Skillet Meatloaf - This is a delicious traditional tasting meatloaf but is made in the electric skillet which gives it a nice, crunchy crust on the bottom. This meatloaf also slices well for sandwiches which s a popular way to serve leftover meatloaf in the South.

Cajun Gumbo - This tasty low country recipe is easy to make and is yummy. Spice things up a bit with a new dish that is Southern through and through.

Taco Soup - Don't let the name fool you. Taco Soup is similiar to Chili Beans but with a hint of Tex-Mex flavor. A make-ahead crock pot recipe, this ground beef (or turkey) recipe is a real hit with the kids.

Yum. I tried this baked fish recipe, and it was terrific. Definately will keep this in the recipe file.
