Forget the jokes about Fruit Cakes. Brown Sugar Fruit Cake is a delicious version of the holiday favorite.

Southern Brown Sugar Fruit Cake will make guests think twice about the holiday cake that gets a bad name and a lot of laughs every year. There are bad fruit cakes, but there are also some excellent fruit cakes that rival any other luxury cake for the holidays.

Brown Sugar Fruit Cake has a richer taste and texture in terms of the cake part. Instead of simply being the batter that holds the fruits together, the cake portion actually adds to the recipe.

As far as the fruits, Brown Sugar Fruit Cake has only candied cherries and pineapples. This eliminates some of the fruits or other additions to the fruit cake that some folks just don’t like. For example, some family members and guests may not like the figs in the mixed fruits, but most do like cherries and pineapple.

All in all, this is a fruit cake that has a broad appeal and can make a fruit cake hater into a fan with just one slice.

Southern Brown Sugar Fruit Cake Recipe

Ingredients:

  • 1 pound butter (softened at room temperature)
  • 1 pound light brown sugar
  • 6 eggs (divided with yolks beaten and whites beaten separately)
  • 4 cups plain flour
  • 1 tsp baking powder
  • 3 TBS lemon extract (or lemon flavoring)
  • 1 pound pecan pieces (chopped)
  • 1 pound candied cherries (chopped fairly fine)
  • 1 pound candied pineapple (chopped fairly fine)

Directions:

  1. In a large mixing bowl, cream butter and brown sugar until creamy.
  2. Add beaten eggs yolks and mix well.
  3. Add half the flour (2 cups) plus the baking powder and lemon extract and beat well.
  4. In a smaller mixing bowl, place the nuts, cherries, and pineapple.
  5. Sprinkle the other 2 cups of flour over the nuts and fruits and toss well. This helps keep the nuts and fruits from sinking to the bottom of the cake. The flour holds them even throughout the fruit cake.
  6. Add the floured nuts/fruits to the main cake batter and mix well.
  7. Beat the egg whites well until they form peaks.
  8. Fold the egg beaten egg whites into the cake mixture. Do not beat or stir hard. The egg whites give the fruit cake a fuller and lighter texture (lacking in many fruit cakes).
  9. Lightly grease and flour a tube baking pan.
  10. Pour fruit cake batter into prepared pan and let sit overnight. Just drape a kitchen cloth over the top of the cake pan.
  11. The next day, bake the fruit cake in a slow oven (250 degrees F) for 3 to 3 ½ hours or until baked through when tested with a toothpick and nicely browned.
