It's hard to be a broccoli hater with this delicious broccoli casserole with cheese and topped with crackers made by home cooks all over the South.

It would be unusual to attend a Southern pot luck dinner and not see a broccoli casserole. But, broccoli casseroles are not just for special occasions. Made with simple ingredients and easy to assemble and bake, broccoli cheese casserole can be a simple main dish or served on the side with main dish meats like ham, turkey, and chicken.

There are many versions of broccoli casserole made by home cooks in the South. Most feature frozen broccoli which can be kept on hand in the freezer and most include some type of Campbell’s cream soup and some sort of cheese. Southern Broccoli Cheese Casserole is very typical of the style with cracker crumb topping, although some versions have various different types of casserole toppers like bread crumbs and stuffing.

Southern Broccoli Casserole Recipe

Ingredients:

  • 2 packages frozen chopped broccoli (10 oz size)
  • ¼ cup mayonnaise
  • 1 small onion chopped
  • 3 eggs beaten
  • 1 cup grated cheese (or 8 oz. Cheese Whiz)
  • 1 can cream of mushroom soup (10 ½ oz)
  • ½ cup cracker crumbs (soda crackers or Ritz for a more buttery flavor)

Directions:

  1. Cook broccoli as directed on package and drain in colander.
  2. In a large bowl, combine all the ingredients with the broccoli with the exception of the cracker crumbs which go on top.
  3. Grease or butter a casserole dish (9 x 9 or 9 x 11 inch etc) and neatly pour broccoli mixture into dish. Spread a little with a spoon to even out if needed.
  4. Crush crackers into crumbs. This can be done by placing crackers in a zip lock sandwich bag and mashing on the baggie.
  5. Sprinkle cracker crumbs evenly on top of broccoli casserole.
  6. Bake in preheated oven at 350 degrees F for 35 to 45 minutes until hot and bubbly.
