If the bananas are getting too ripe and going begging or if there’s a grocery store deal on overripe bananas, it’s the perfect time to make frosted Southern Banana Cake. Of course, any day is great for this moist and flavorful fruit snack cake, but this banana recipe works best with good, ripe bananas. Ripe bananas mix in easier and also taste sweeter than green tinted bananas.
Kids love this banana sheet cake, but banana cake is also appealing to grown ups with a little taste of coffee in both the cake batter and in the fluffy frosting.
Since this is a cake mix recipe for the base, Southern Banana cake squares are very easy to whip up. With the tweaks of the cake mix and the addition of coffee and bananas, this Southern snack cake definitely tastes homemade.
Southern Banana Cake Recipe
Ingredients;
- 1 pack of yellow cake mix (do not add ingredients listed on box – just use the cake mix powder)
- 1 ½ cups bananas sliced thinly
- 1 cup buttermilk
- ¼ cup coffee (cold – not hot)
- 2 eggs
Directions:
- In a large mixing bowl, combine all ingredients and mix until smooth and creamy.
- Bake in a 9 x 13 inch baking or casserole pan at 350 degrees F for 25 to 30 minutes or until a toothpick comes out fairly clean (remembering that this is a very moist cake).
- Let banana cake cool and then frost with Banana Cake Frosting.
Banana Cake Frosting Recipe
Ingredients:
- 1 1/3 cups powdered sugar
- ¼ tsp salt
- 1 TBS softened butter or margarine
- 2 TBS coffee (cold – not hot) or enough to make a smooth icing
Directions:
- Combine frosting ingredients in a medium mixing bowl and whip until smooth and creamy.
- Spread frosting over top of cool cake with cake spreader or spatula.
