It would be difficult to find a Soul Food restaurant in the South that did not have a version of Smothered Pork Chops featured on the menu. Most Southerners have a favorite family recipe for these pork chops, and they are served frequently, not only because they are moist and delicious, but also because they require very little hands-on preparation time and are very easy to assemble.
Sometimes the most flavorful dishes are made with simple ingredients; these pork chops are a perfect example. They can, however, be spiced up a little by adding 2 teaspoons of Cajun seasoning (or any favorite seasoning) to the flour instead of the salt. Although sweet potatoes are traditional and add a bit of sweetness to the dish, regular russet potatoes or even red potatoes may be substituted with excellent results.
To speed up preparation time for these pork chops, use a food processor to slice the sweet potatoes, onion, and green bell pepper. While the chops are baking in the oven, there will be just enough time to prepare a salad, set the table, and call the family (or guests) to dinner.
Southern Style Smothered Pork Chops
6 Servings
6 6-ounce boneless pork chops, 1" thick
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
2 medium sweet potatoes, peeled and thinly sliced (about 1 pound)
salt and freshly ground pepper, to taste
1 large onion, sliced
1 green bell pepper, sliced
1 teaspoon granular chicken bouillon dissolved in 1 cup water
Trim the pork chops of all fat.
Mix the flour, salt, and pepper; dredge the chops.
Heat the vegetable oil in a deep skillet (with a lid) large enough to accommodate the chops in a single layer without crowding.
Turn the burner to high heat; add the chops, and brown. Make sure the chops are not crowded, so they will brown evenly; they should be golden brown on each side, but raw in the middle.
Leave the pork chops in the skillet and layer the sweet potato slices on top of the chops
Sprinkle with salt and freshly ground pepper.
Scatter the onion and green pepper slices over the sweet potato slices.
Pour in the bouillon/water mixture, cover with the lid, and bake at 350° for 30 - 45 minutes or until the sweet potatoes are tender.
