This is a blender pie. Ingredients are combined and mixed with a home blender. As the coconut pie bakes, a crust forms on the bottom, the center forms a custard, and the coconut floats to the top.

Anyone who has problems making pie crusts will enjoy the ease of this fun pie recipe. Even great pie crust makers enjoy this one for the “wow” factor. It’s just pretty neat to make a pie that sorts itself out.

When the kids are home for the holidays, this recipe is simple to whip up and also is one that kids and teens like to see take shape in the oven. There’s certainly some kind of science lesson here, but the kids just think it's fun to make magic pie.

Magic Christmas Pie Recipe

Ingredients:

  1. Put all the ingredients in the blender and blend until smooth.
  2. Pour into well greased 9 inch deep dish pie pan or into a 10 inch square pan.
  3. Bake for around 1 hour (usually 5 or so minutes more than an hour) at 350 degrees F.
  4. Cool and serve.
  5. And be sure to tell everyone about the magic of the pie that divides itself as it bakes.

Another favorite Southern pie is Pecan Pie. Although many Southern cooks place the nuts on top, the pecans can be stirred in the batter. The nuts come to the top just like the coconut in the Magic Christmas Coconut Pie.
