This is a blender pie. Ingredients are combined and mixed with a home blender. As the coconut pie bakes, a crust forms on the bottom, the center forms a custard, and the coconut floats to the top. Anyone who has problems making pie crusts will enjoy the ease of this fun pie recipe. Even great pie crust makers enjoy this one for the “wow” factor. It’s just pretty neat to make a pie that sorts itself out. When the kids are home for the holidays, this recipe is simple to whip up and also is one that kids and teens like to see take shape in the oven.
