If you’re never had real pimento cheese, you are in for a treat. Pimento cheese is a Southern favorite, but it gets a bad name from all those pieces of celery packed full of that bright orange store bought pimento cheese. The most basic recipe for making pimento cheese sandwich spread is to get a half pound of medium cheddar cheese at room temperature and grate the cheese. Then stir in 1 small (4 oz) jar of chopped red pimentos and ½ cup of mayonnaise. That’s very tasty and is quick and easy. For a more gourmet pimento cheese, you cook a sauce and mix in your cheese and pimentos.
