Traditional Pimento Cheese Made from Scratch

Pimento Cheese made from scratch tastes entirely different from pimento cheese in the plastic containers at the grocery.

If you’re never had real pimento cheese, you are in for a treat. Pimento cheese is a Southern favorite, but it gets a bad name from all those pieces of celery packed full of that bright orange store bought pimento cheese.

The most basic recipe for making pimento cheese sandwich spread is to get a half pound of medium cheddar cheese at room temperature and grate the cheese. Then stir in 1 small (4 oz) jar of chopped red pimentos and ½ cup of mayonnaise. That’s very tasty and is quick and easy.

For a more gourmet pimento cheese, you cook a sauce and mix in your cheese and pimentos. This, of course, takes more time, but it’s the old fashioned pimento cheese that you may remember your grandmother making.

Old Fashioned Homemade Pimento Cheese Recipe

Ingredients:

  • 1 TBS butter (or margarine)
  • 1 TBS plain flour
  • 2/3 cups evaporated milk (not condensed)
  • 1 TB vinegar
  • 1 tsp sugar
  • 1 tsp dry mustard
  • 1 egg, lightly beaten
  • ½ pound regular American processed cheese - grated
  • ½ pound cheddar cheese – grated
  • 1 small jar of pimento diced (4 oz. jar with juice)
  • 1 TBS mayonnaise
  • Salt to taste (optional)

Directions:

  1. Heat butter in a sauce pan over medium heat until melted.
  2. Add flour and stir. Reduce heat to low and stir constantly and simmer for about 1 minute.
  3. Mix together the milk vinegar, sugar, and mustard and then slowly add to the thickened butter/flour while stirring.
  4. Take a spoon of this hot mixture and put in the bowl with the beaten egg. This prevents the egg from curdling or cooking and leaving cooked egg chunks in your mixture. Once you stir in the spoon of hot mixture, then you can pour the egg in with the base.
  5. Cook on low until the sauce mixture begins to thicken up. It will be like a thin pudding.
  6. Remove from heat and add the grated cheeses and pimento and stir.
  7. Add a little salt is you like and stir that in.
  8. Refrigerate for a couple of hours and then serve on white bread.
