Hamburger Vegetable Soup
Ground Beef and Vegetables Make an Easy and Tasty Cold Day Soup
Enjoy a hearty, inexpensive soup that hits the spot on cold days. Hamburger Vegetable Soup is easy to make too.
If you have a pound of hamburger and an extra hour, you can make a delicious soup on a cold day. The whole house smells fabulous as this ground beef soup simmers, and a bowl of Hamburger Vegetable Soup is pure comfort when it’s done.
Hamburger Vegetable Soup Recipe
Ingredients:
- 1 pound low fat ground beef (ground turkey or chicken are fine too)
- ½ cup chopped onion
- 1 glove garlic – chopped fine or minced
- 2 cans petite diced tomatoes (14 oz or so per can)
- 5 cups water
- 2 beef bouillon cubes
- ½ tsp pepper (fresh ground is wonderful)
- 1 – 2 cups frozen vegetables
Directions:
- Cook ground meat in a skillet. Use a fork to break it up in small chunks as the meat is cooking.
- Drain off grease and remove meat. In the little grease left in the pan before washing, quickly cook the onion and garlic.
- Put meat, onions and garlic in a stock pot and add tomatoes. If you do not like chunkier tomatoes, just run the petite tomatoes through the blender to make them less chunky.
- Add water, bouillon cubes and pepper to the hamburger mixture.
- Heat to a boil and then reduce heat to low and simmer the hamburger mixture for around 20 minutes. The times here can vary. If you let the meat mixture simmer longer, that’s fine.
- Add frozen vegetables about fifteen minutes before you’re ready to eat. The vegetables are cooked so just need to be heated through. It should take around 15 minutes with the heat on simmer for the vegetables to be soft and hot.
- Dish up and serve.
