No time to bake a cake from scratch? Start with a store bought Angel Food Cake and build a Southern Ambrosia Dessert.

Although Southerners are known for home baking, there are many shortcut recipes that either are built around a boxed cake mix or a purchased cake and made special by the way the cake is frosted or “fancied up” as they say in the South.

Ambrosia Cake is a typical fancy cake made most often with a store bought angel food cake, although some cooks also make the base angel food cake from scratch as well. That then makes this a more time consuming and a more difficult recipe. With a purchased cake, this is a super easy cake recipe that tastes great and looks pretty as well.

Easy Southern Ambrosia Cake Recipe

Ingredients:

  • 1 store bought 10 inch angel food cake (or bake one from scratch if desired)
  • 2 cups sour cream
  • 1 can crushed pineapple, drained (8 ounce size)
  • 1 can of flaked coconut (3 ½ oz size can or 1 ¾ cups if using fresh or bagged coconut)
  • ¼ cup brown sugar
  • 1 can mandarin orange sections, drained (11 ounce size)

Directions:

  1. Cut angel food cake crossways into three layers like a typical layer cake. A sharp serrated knife works well for cutting cakes or breads.
  2. Mix together the sour cream, drained pineapple, coconut, and the brown sugar. This can be done easily with a big spoon.
  3. Take the bottom piece of the angel food cake which was split previously and place that on a cake server or plate - whatever you plan to use to serve and store the dessert.
  4. Spread 1/3 of the sour cream/pineapple mixture on top of the bottom cake layer.
  5. Add the next cake layer and frost.
  6. Top with last 1/3 of the cake and frost the top with the remaining ambrosia frosting.
  7. Drain the mandarin orange slices well and then place them artfully around the top of the cake.
  8. Chill Southern Ambrosia Cake before serving. A couple of hours or overnight works well. That gives the flavors time to gel.
