Easy Slow Cooker Dinner Meal with Garlicky Beans and Rice

Beef Pot Roast, and white beans on hot fluffy rice can warm a body right down to its soul on a cold Fall or Winter day! Just add a simple salad for an easy healthy meal.

Crock-pot Beef Roast in Beer served with hot Navy beans is an excellent menu choice for hectic workdays – or days when the cook would rather be snuggled up with a book by the crackling hearth than spending hours hovering over a stove.

The only equipment required is two 3 to 5-quart Rival Crock-pots or other slow cooker models. The cook’s favorite novel is, of course, optional.

Crock Pots and Slow Cookers

There are many different makes and manufacturers of crock pots and slow cookers on the market. The original maker of the electric slow cooker is Rival who makes the Rival Crock-Pot brand of slow cooker.

Both, Rival's and other manufacturers' slow cookers, come in a variety of sizes and with any number of features. Some popular features include multiple cooking settings, a warm and hold setting, and automatic cooking / shut-off timers; like on the Rival Programmable Crock-Pot. Some models are even multi-purpose, featuring detachable cooking surfaces, removable liners, and pressure cooker features.

Slow cooking in a crock pot makes meal planning and preparation a breeze. Simply assemble the ingredients in the crock pot, replace the lid, set the heat setting to high or low, and forget it. Crock-pot cooking allows the cook to spend her time away while the meal cooks itself.

Crock-Pot Beef Roast in Beer Recipe, Serves 6 – 8

Ingredients:

  • 2 – 3 pound beef roast
  • Salt and Black Pepper, to taste
  • 3 tablespoons butter
  • 3 – 5 medium onions, peeled and sliced
  • 2 – 3 garlic cloves, crushed and minced
  • 1 cup beef broth
  • 1 cup beer (any kind will do)
  • 2 tablespoons brown sugar
  • 2 tablespoons Creole mustard (Dijon, if Creole is unavailable)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch dissolved in ¼ cup water

Instructions:

  1. Generously season the roast with salt and pepper to taste, and place it in slow cooker.
  2. Melt butter in a large skillet and sauté onions until they are nicely caramelized. Add garlic.
  3. Mix together the beef broth, beer, brown sugar, mustard and vinegar, and add to the onions.
  4. Continue cooking until the mixture is heated through, then pour over roast in the Crockpot.
  5. Place lid on the slow cooker and set it to cook on high for approximately 6 hours, or on low for about 8 hours.
  6. When tender, remove roast to a platter to rest.
  7. Pour the cornstarch slurry into the meat juices, and continue cooking until gravy thickens.

Crock-Pot Navy Beans and Garlic, Serves 10

Ingredients:

  • 1 pound dried Navy beans
  • 6 cups water
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 2 garlic cloves, crushed and minced
  • ½ teaspoon rubbed sage
  • 1 bay leaf
  • ¼ cup fresh parsley, chopped

Instructions:

  1. Rinse and sort Navy beans.
  2. Place beans and water in the crock pot.
  3. Add onion, bell pepper, garlic, sage and bay leaf.
  4. Cover the slow cooker, and set to cook on high for approximately 6 hours or on low for about 8.
  5. Beans should be tender and sauce should be creamy when done.
  6. 30 minutes before serving, stir in fresh chopped parsley.
  7. Check beans for seasoning and add salt and pepper, to taste, at this time.
