The flavors of cranberries and apples blend beautifully in a sweet casserole that is served during the holidays, for company meals and at pot luck dinners.
If you need a pretty casserole for a special meal, then Cranberry Apple Casserole certainly fits the bill. With the contrasting colors, it's an eye pleaser.
Of course, this is southern cooking, so a dish must also taste fabulous to make the family repeat list. Cranberry Apple Casserole is definately a taste treat. The tart zing of cranberries and cooking apples doctored up with sugar (both white and brown) put this on the comfort food list too.
Topping
Directions:
Mix together the apples, cranberries and white sugar and place in a buttered casserole dish (9 x 11 or close).
Mix together butter, brown sugar, and oatmeal. Stir. Pour over top of apple/cranberries.
Sprinkle pecans on top.
Bake at 325 degrees F for 1 hour.
The Cranberry Apple Casserole recipe works best if you cover the casserole until the last 5 to 10 minutes. You can use a lid or cover with tin foil. Just take that off during the last few minutes to crisp the topping a bit.
