Quick breads are popular in the South, and there are loads of variations. Cheese and Corn Bread is a special bread that's rich and tasty.

If you’re looking for a quick and easy bread to jazz up a simple meal, try a Cheese and Corn Bread. This bread goes well with beans (like pinto soup beans) and fresh garden vegetables or a salad. Since it’s a rich and hearty bread, it becomes the centerpiece of the meal. It's even great as a snack served with a tall glass of cold milk.

Cheese and Corn Bread Recipe

Directions:

  1. In a medium bowl, mix together flour, sugar, baking powder, and salt. If you don’t have plain flour and use self rising flour, then do not add the baking powder and salt. Those are already mixed in the self rising flour.
  2. Add the egg and milk and stir lightly until blended.
  3. Fold in the cheese, corn, and oil. Stir lightly until the mixture is even. It will be lumpy with the corn and cheese.
  4. Bake at 400 degrees F in a greased 8 inch pan for around 45 minutes. If you use a 9 inch pan, cut the cooking time about 10 minutes short – down to 35 minutes. The top will be golden brown when the bread is done.

Cast Iron Skillet Corn Bread – This is a classic Southern recipe. The cornbread is baked in a cast iron skillet and has that thick and crispy crust with a butter ring around the top. Southerners love this type of cornbread lathered with butter or served with soup beans (usually pintos) poured over the cornbread.

Old Fashioned Corn Bread – If you don’t have a cast iron skillet, then this basic corn bread recipe is excellent and is baked in a regular pan. The crust has more of a cake texture – a little softer than cornbread baked in cast iron.

Carrot Bread – Carrot Bread is similar to Carrot Cake, but it’s a little less sweet. This is a favorite breakfast or snack bread in the South. It's delicious served hot and buttered or with cream cheese.

Sweet Potato Bread – This is a beautiful bread. It’s also sweet and is good for breakfast or can be served after dinner with a cup of coffee. This bread is especially popular around the holidays. Cook down some extra sweet potatoes when making up casseroles or other sweet potato dishes and then make a loaf of Sweet Potato Bread to have on hand.
