Apple Cabbage Salad

Apple Cabbage Salad is a good dish to make on a hot day. No cooking required. It's also nice to make ahead for barbecues or pot luck dinners.

Cabbage and apples both have a nice crunch and though they taste very different, the two combined make a refreshing side dish.

This is one of my super easy recipes. The chopping takes a little time, but most folks have some kind of food processing machine these days.

Southern Apple Cabbage Salad

  • 2 red firm apples (Red Delicious is good)
  • 3 cups chopped cabbage
  • 1 cup raisins
  • 1/2 cup mayonnaise or Miracle Whip
  • TBS sugar

Directions:

Wash apples. Chop with the skins on. This gives the salad some color.

Chop the cabbage. You want the pieces pretty fine.

Add the raisins and toss.

Mix the sugar in with the mayonnaise or Miracle Whip. If you use mayonnaise, you have a different taste than if you use Miracle Whip. Miracle Whip is sweeter. Both are good. You may want to taste test a bite of each on a spoon of cabbage and then decide which you prefer.

You may also like less or more of the mayo/Miracle Whip. Some folks like this pretty drippy while others like it fairly dry. It does get wetter as it chills, so aim for a little less wet than you want on the final product.

Chill the Apple Cabbage Salad for a couple of hours at least or overnight in an airight container.
